Roasted Pumpkin Seeds {Recipe}



Today I'm sharing one of my favorite recipes for roasted pumpkin seeds. I've used the same recipe for the past 2 years because it requires little effort {um, helloo..I'm a gimp} and it's uber tasty! Roasted pumpkin seeds are full of fiber and protein so if you don't coat them in massive amounts of butter {like I did}, they can be a fulfilling healthy snack. Not to mention, they are pretty festive for Halloween :)


There are many ways you can season your pumpkin seeds...

spicy
salty
sweet
natural
'halloweeny'


I prefer mine spicy and that's what I'm sharing today. I will include a link for what seems like an amazing kettle corn seasoning recipe as well, for all you non-spicy fans. Doesn't that just sound so good?! Kettle corn...mmm.


First--you will want to make sure you clean the seeds. Seperate the seeds from the pumpkin flesh and all the strings. Put them in a strainer and wash them with water. You will want them to be dry before you season them. I read that you can use a hair dryer to hurry up the process, but I just waited it out.

Once the seeds are dry, you are ready to season!


Here's the ingredients you will need:





-4 tablespoons melted butter
{I only used 3 to cut back a little bit}
 you can also use olive oil instead if you prefer.
-1 tsp cayenne pepper
-1/2 tsp thyme
-1/2 tsp salt {sea salt is best}
-1/2 tsp pepper



Put the pumpkin seeds in a medium size bowl and mix all the ingredients into the bowl. Make sure all the seeds are coated well and mixed up evenly. Spread the seeds on a cookie sheet and bake at 275 degrees for 10-20 minutes {or until golden brown.} Keep your eye on them and check them every few minutes so they don't burn.

  1. I don't think you understand my LOVE for roasted pumpkin seeds. I literally YELL at people when carving pumpkins if they waste ANY seeds! so deliciously amazing!

  13. Those pumpkin seeds look delish, but not as delish as RPatz. I would seriously eat that boy with a spoon. I have loved him since he was in HP. Ah...swoon. Are you counting down the hours until Breaking Dawn comes out? Already bought my tickets.

  17. The pumpkin seeds are supposed to be crunchy, right? I have not so good memories of my mom attempting these when we were little. Didn't end so well. Glad yours turned out fabulously! :)
