Vegetarian Chili
thank you Martha for this recipe
A fall staple in our house.
I couldn't find this recipe a couple weeks ago when I blogged about it, so here it is now. I love chili in all forms, but this one is extra special because it can be done in 35 minutes. Even better.
Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 medium yellow onion, diced medium
- 4 garlic cloves, roughly chopped
- 1 1/2 teaspoons ground cumin
- 1 teaspoon chipotle chile powder
- Coarse salt and ground pepper
- 1 medium zucchini, cut into 1/2-inch dice {I also add a bunch of carrots}
- 3/4 cup (6 ounces) tomato paste
- 1 can (15.5 ounces) black beans, rinsed and drained
- 1 can (15.5 ounces) pinto beans, rinsed and drained
- 1 can (14.5 ounces) diced tomatoes with green chiles
- 1 can (14.5 ounces) diced tomatoes
Directions
In a large pot, heat oil over medium-high. Add onion and garlic; cook, stirring frequently, until onion is translucent and garlic is soft, about 4 minutes. Add cumin and chile powder, season with salt and pepper, and cook until spices are fragrant, 1 minute. Add zucchini and tomato paste; cook, stirring frequently, until tomato paste is deep brick red, 3 minutes. Stir in black beans, pinto beans, and both cans diced tomatoes. Add 2 cups water and bring mixture to a boil. Reduce to a medium simmer and cook until zucchini is tender and liquid reduces slightly, 20 minutes. Season with salt and pepper.
While surfing my favorite health websites, I found this great article that shares 13 different bell pepper recipes. I absolutely love all types of peppers - they are packed with nutrients and easy to cook with.
Did you know you can download the Spark recipes app for free on your iPhone?
I have it and use it all the time. It's a great source for easy dinner recipes if you aren't sure what else to make.
Last but not least...
Tail Waggin' Tuesdays is here!
Today's link up is to share any random pictures of your pet.
Here's some random pictures I snapped of Rocky loungin' around..he looks so sweet & innocent I can't help myself but take 591 shots of him.
he's such a good little poser, isn't he?
momma taught him best.
I think I'z a cat.
PS: I went to a heated yoga class last night with this pretty lady & think that I finally sweated out {meaning walked out drenched from head to toe} this nasty cold.
You really should go read about her recap of our yoga class
here.
it will have you laughing
at my expense.

ReplyDeleteLittle Rocky is such a cutie just lounging around. I love his little ears :)
Hey you wanted a comment so you get one. That chili looks good but I think I would sneak some meat into it. I am a meatatarian so I don't do vegan to well.
ReplyDeleteOhh so when you guys coming down and going hunting?
Yum!!! I've been dying to make chili and this one looks perfect! +noodles...I am a Cincinnatian after all :)
ReplyDeleteYuummm Love me some chili, that looks good!!

Glad you had a good time at yoga... FYI i would take a towel and water, because I always need it for heated yoga!! Glad your feeling better :)
This chili looks great. I'll have to give it a try. Also I love the new blog re-design!
ReplyDeleteThis is perfect for nights when I'm craving chili but don't have hours to wait around. Can't wait to give this one a try!
ReplyDeleteUm so I think I might use this recipe in my company's blog...would that be cool with you? I post recipes every Wednesday. I'll link back to ya! DUH!
ReplyDeleteWill you ask Rocky if he'll be Tini's boyfriend? She needs a good, fluffy man in her life. She's kind of high maintenance but she's a blonde if that's any constellation. She has brown eyes and enjoys long walks on the beach. Oh-and did I mention she's high maintenance?
PS-can we talk about how my husband is a wannabe blogger?? He's probably the first guy to EVER comment on your blog. Am I right? Or am I right?
Your pup is looking adorable as usual, and that chili. Yum!
ReplyDeleteI think I will have to try that recipe! Looks good to me b/c I don't like ground beef (or any meat for that matter)! Thanks
