Tuesdays always make me want to blog about my favorite recipes or anything tasty I've come across lately. I really need to come up with a link up or something for this, but there are so many out there already. Besides, that would require mass creative ability, which often I lack after a late soccer game where my thighs feel they may fall off my legs. Therefore, you get this...pure randomness.
Bolthouse Farms Green Goodness Smoothie
I know most of you turn away from drinks that are green in color and rumored to have spinach or broccoli in them, but I pinky promise you this one is GOOD. It's not organic, but it has 3 3/4 servings of fruits and veggies. What's in the bottle you ask? 1 1/2 apples, 1/4 pineapple, 1/2 mango, 1/2 banana, 1/2 kiwi fruit...plus spirulina, green tea, spinach, broccoli, wheat grass, iron, garlic, vitamins a, b6, b12, and c. The taste is sweet and tarty. You can taste the apples and kiwi's the most, just like what they have pictured on the front of the bottle. The sugar is a bit on the higher side, but it's all natural sugar and there's so much potassium in this drink. If you struggle with green monster smoothies that you may at home, this would be a good beginner green smoothie.
Some of you asked yesterday for the recipe for the skinny girl Taco Dip I made over the weekend...so I'm here to share. I should've talked about this website before but it slipped el mindo. What I'm referring to is Gina's Skinny Recipes. She is an expert at twerking recipes to make them healthier. The taco dip I made over the weekend is pretty much your typical taco dip but using all reduced fat ingredients. Here it is.
Skinny Taco Dip
- 8 oz 1/3 less fat Philadelphia cream cheese
- 8 oz reduced fat sour cream
- 16 oz jar mild salsa
- 1 packet taco seasoning
- 2 cups iceberg lettuce, shredded
- 2 large tomatoes, diced
- 1 cup reduced fat shredded cheddar cheese
- 2.25 oz black olives, optional
In a large bowl combine cream cheese, sour cream, salsa and taco seasoning and mix well with an electric mixer. Spread on the bottom of a large shallow glass dish. Top with shredded lettuce, tomatoes, shredded cheese and black olives. Serve with baked tortilla chips.
You can add green peppers too if you want to add some more veggies.
Some of you may be thinking that the man in your life won't eat this because everything is fat free or reduced fat, which may be true. Billy prejudges everything like that and says he won't eat it, but the man ate this up and even came back to eat it again later in the day.

Red, White and Blueberry Trifle:

Ingredients:

Ingredients:
- 10 oz angel food cake, cut into 1-inch cubes*
- 2 pints strawberries, sliced
- 2 pints blueberries
For the cream filling:
- 6 tbsp fat-free sweetened condensed milk (I used Borden Eagle)
- 1 1/2 cups cold water
- 1 package sugar-free white chocolate instant pudding mix
- 12 oz fat-free frozen whipped topping, thawed
Directions:
Whisk the condensed milk and water in a bowl. Whisk in the pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set; fold in the whipped topping.
Arrange half of the cake in the bottom of a 14-cup trifle dish. Sprinkle evenly with a layer of blueberries. Spread half of the cream mixture over the blueberries and gently spread (I piped it using a plastic bag and cut the corner off). Top with a layer of strawberries. Layer the remaining cake cubes on top of the strawberries, then add more blueberries and top with the remaining cream mixture. Finish with the remaining strawberries and blueberries, arranging them in a pretty pattern. Cover and refrigerate at least one 1 hour.
*I only used 10 oz of a 16 oz cake.

I was looking at her website and thought why I didn't have a site like that because (not to toot my own horn) but I'm pretty good at sliming recipes down. However at the end I decided I couldn't do it. I love butter and cake too much! When I get more readers, we should do a guest blog switcheroo! Sure we blog about different things, but we could hang.:)
